Cookies of chocolate
The ingredients that I need:
1/2 cup unmelted coconut oil (105 g)
3/4 cup brown, cane or coconut sugar (135 g)
1 teaspoon vanilla extract (optional)
3/4 cup unsweetened vegetable milk (190 ml), I used soya milk
1/2 cup unsweetened cocoa powder (40 g)
1 teaspoon baking soda
1/4 teaspoon salt
1 and 3/4 cups whole wheat flour (210 g)
1/2 cup vegan chocolate chips (90 g) + 2 tablespoons for garnish, (optional)
All the steps you must do:
1-Heat the oven to 180ºC or 350ºF.
2-Pour the coconut oil and sugar into a bowl and mash the mixture with the help of a fork.
3-Add the vanilla extract, vegetable milk and cocoa. Stir until fully integrated.
4-Add the baking soda and salt and stir again until fully combined.
5-Pour in the flour and stir until it is more or less integrated.
6-Make balls with your hands and place them on a baking sheet lined with baking paper.
7-Bake for about 12-15 minutes (in my oven they were ready in 15 minutes) or until the tops of the biscuits are dry and lightly browned. Let the biscuits rest on the tray for 5 minutes.
8-Store the biscuits in the fridge for about 1 week or in the freezer for a month.
