Potato croquettes Ingredients: 1 kg of potatoes 4 egg yolks 1 egg 1 tablespoon of oil Flour Bread crumbs Salt and nutmeg Preparation: Cook the potatoes in their skins, drain and let them cool slightly before peeling them. Once peeled, chop them and pass them through a food mill. In a bowl, mix the mashed potatoes with the egg yolks and butter, and season with salt and nutmeg, to taste. Form rolls with the warm dough and let them cool. When the rolls are cold enough, cut them into pieces about 4 or 5 cm long, coat them in flour, egg and breadcrumbs, and fry them in hot oil.
